Shinobi Dubai is one of the newer dining spots to know on Al Wasl Road, bringing together Japanese handrolls, New York-inspired design and an energetic soundtrack. Open since July 6, the intimate counter restaurant from Monarch Hospitality Group takes a more playful approach to Japanese dining, swapping hushed interiors for neon lights, industrial details and hip-hop beats.
A Handroll Experience Built Around the Counter
Shinobi is centred around a U-shaped counter, placing diners directly in front of the culinary team as each handroll is prepared and served. The format makes the meal feel immediate and interactive, with the rolls intended to be eaten straight away.
Timing is particularly important here. The warm, seasoned rice and freshly prepared fillings are wrapped in crisp nori just before they reach the table, allowing diners to enjoy the contrast in texture at its best.
Signature options include the Otoro Truffle and Akami Nori handrolls, alongside combinations such as spicy tuna and snow crab. The wider menu also includes salmon crispy rice, Wagyu tacos and tuna tataki with yuzu ponzu.
A Tokyo Counter Meets New York Subway
The interiors take a decidedly urban approach. Rather than leaning into the minimalist wood and muted tones often associated with Japanese restaurants, Shinobi draws on the visual language of New York’s subway system.
A private dining room is designed like a subway carriage, while tiled surfaces, metallic finishes, graffiti-inspired details and neon lighting add to the atmosphere. The soundtrack follows the same direction, moving through old-school hip-hop and contemporary beats, with live DJ sessions adding to the evening energy.
More Than Just Sushi
The drinks menu keeps things alcohol-free, with house-made kombuchas, craft sodas, teas and specialty coffees complementing the food.
For dessert, the ube soft serve topped with Maldon sea salt offers a colourful finish, while the strawberry matcha kakigori brings a more playful option to the table.
The Latest From Monarch Hospitality Group
Shinobi is the latest concept from Monarch Hospitality Group, the team behind local favourites Kraken and Mamati. Founder Badr Benryane has described the concept as an experience where food, music, design and people are given equal importance.
Located at Villa 8, Al Wasl Road, Jumeirah 2, Shinobi is open daily from 5 pm to midnight. The restaurant operates on a walk-in-only basis, making it an easy option to add to an evening around Al Wasl Road without planning too far ahead.
